Stuffed S’mores Cookies

Smore Cookies BrokenSo, I fell off the low-carb wagon this weekend. Hard. Because of these cookies.  These deliciously gooey, marshmallow-stuffed cookies.

I don’t know where it came from, but I had a sudden, intense need for something flavored like s’mores.  I toyed with the idea of a cupcake but was worried that it would not capture the essential texture of a s’more. The next bet was the obvious cookie route.  Not as creative but definitely much more satisfying for this particular craving. John decisively threw in his vote for a cookie, and it was on. Korean Pork TacosMy lovely friend from grad school, Mande, is one of my biggest blogging inspirations.  She blogs over at Klein Dot Co, and her bubbly personality comes through in every post.
