Grilled Chile-Rubbed DrumsticksWe finally bought a grill!  After only four years of “researching,” and almost another entire summer gone by, we finally bought a gas grill.  I’ve been wanting one for so long!

I’ve never really cooked on a grill, but that all changed almost immediately after John put this baby together.  So far, I’ve tried fish, turkey burgers, asparagus, potatoes, and chicken. While I definitely need to hone my grill skill with the fish and burgers (stick much?), the veggies and chicken came out great. Continue reading

Slow Cooker Jamaican Jerk Chicken Tacos

Jalapenos from the gardenIt all started in my mom’s garden with these little jalapeños.

Every time I visit my parents, my mom always sends me home with a giant bag of stuff. Stuff she found in the garage. Stuff she bought for me on sale. Stuff she grew in her garden. I have to admit, even though I have NO space in my little condo, lately she has been getting pretty good at weeding out what I don’t want and giving me what I do want or need. I especially love when she sends me home loaded with fruits and veggies from her garden.

So, back to the jalapeños. I had these little guys looking all cute and shiny, just begging to be used for something good.  I wanted to use them for something special because it’s not every day that I get to use homegrown peppers. Continue reading

Chicken Salad Lettuce Wraps

Chicken Salad Lettuce WrapFor our wine tasting parties, I do extensive research to pair our wine choice with some delicious food. For our rosé taste-off, I was happy to find that this wine pairs with a variety of dishes.

Some specific tidbits I picked up about pairing rosé is that it likes creamy and it likes salty.  So, I decided that one of my dishes would be a creamy, crunchy chicken salad lettuce wrap. Continue reading
