I was inspired to bake babka because of the Seinfeld episode, The Dinner Party. In the episode, the gang is going to a dinner party, and Jerry and Elaine are attempting to purchase a chocolate babka to bring. When the bakery runs out of chocolate, they are forced to purchase cinnamon, which, according to Elaine, is the lesser babka. Jerry disagrees, stating that “cinnamon takes a backseat to no babka.”

So, I fell off the low-carb wagon this weekend. Hard. Because of these cookies. These deliciously gooey, marshmallow-stuffed cookies.
I don’t know where it came from, but I had a sudden, intense need for something flavored like s’mores. I toyed with the idea of a cupcake but was worried that it would not capture the essential texture of a s’more. The next bet was the obvious cookie route. Not as creative but definitely much more satisfying for this particular craving. John decisively threw in his vote for a cookie, and it was on. Continue reading
